I remember a lot of times coming from the city of Dubrovnik to Ston main square, feeling totally different vibe (with all the locals sitting on main streets)

Here are some tips:

go early in the morning or later in the afternoon
HAVE A NICE COFFEE ON MAIN TOWN SQUARE, if you pick the right time (lookup), just count the locals in the bars around you
Lunch in Mali Ston is very turistic, why not explore around
Pay for the parking if you are by car (they check)
Try "Primorska Torta" (cake with pasta, very local and tastefull)
